THE GREAT MARINA OYSTER ROAST (February 2007)

Nothing keeps the Heritage folks away from one of Dock Master Doug's famous oyster roasts...not even an unseasonably chilly night. Despite the temperature hovering around 42 degrees, and the wind chill allegedly around 38, at 5PM the Marina deck began to hum. The oyster cookers were steaming and the smokey "dawgs" sizzling as our intrepid Heritage folks arrived with more food offerings to reward the hearty. Everyone had trotted out their parkas of old from past lives "up north" and bundled up well. With the deck "roof", the side curtains and the new heaters, plus a liberal dose of liquid warming, the evening was once again another grand success.

(left) Dock Master Doug, ever the gracious host, offers these early-comers a choice of seating...indoors where it's warm and toasty and the buffet table groans with goodies, or outdoors where it's naturally air-conditioned and the oysters and smokey "dawgs" rule! Hmmmm, hard choice!
(right) Doug's helpful wife has staked out the warmest post of the evening...grilling the smokey "dawgs".

Cooking the oysters is a well orchestrated performance requiring the ability to stay ahead of demand while managing to do a little sampling for quality control. It's easy to see by the smiles, Doug has once again scored the biggest and the best oysters around.

The real star of the show....fresh, tasty and disappearing fast! These people could not agree more.

What could be better than sharing the sun setting over the Waccamaw with a few good friends... and a lot of good food.
Despite the temperatures, the new deck once again proved the perfect spot to enjoy it all.
